🌋 The part we liked the best in Cotopaxi National Park where the namesake volcano dominates, was horseback riding with a local cowboy, or chagra. 🌋 Only a couple of hours south of Quito, the capital of Ecuador, Cotopaxi is one of the highest active volcanoes in the world. 🇪🇨 Quito is the capital of Ecuador, and with a fairly unstable political situation, it’s not always very quiet in town 🪖 🍫 Where do you think the best chocolate in the world comes from❓ 🌿 What is fantastic @MundoNuevoMinca and @PlanBFarmToTable is that when the land is cared for sustainably, not only is the food (📸8️⃣) from the farm tastier and more nutritious, but the land becomes a haven for biodiversity, and more specifically birdlife. 🛖 It is not only travelers who enjoy the ecolodge @mundonuevominca (see previous post). A family of Wiwa people (one of the indigenous tribes of Colombia who lives in harmony with nature) has also elected this nourishing land as their home.
