Even if okonomiyaki can be found all over the country, it is one of Hiroshima’s specialties. So once there, around lunch time, we walk to Okonomi-mura. There, on three levels, we can choose between dozens of counters set up around a hot griddle. We sit around the teppan, or hot iron table, and order. The cook starts by shaping a thin disc on the griddle with the batter. He tops it with green cabbage, soy, spring onions, herbs and pork meat. Another cook grills the udon noodles on the side before adding them on top of the pancake. An egg is fried while the pancake is skilfully flipped over on top of the egg before being flipped over again with the help of two spatulas: the egg is now the top cover. A delicious sweet sauce is added for the finishing touch, before the okonomiyaki is pushed towards us on the griddle. After enjoying seeing the cooks prepare it, it is time to dig in with chopsticks!
Okonomiyaki sometimes referred to as savory pancake is a delicious and cheap food served with no frills around a griddle. Toppings can be chosen from meat to vegetables or seafood.
